I went to a Halloween party this Saturday that was camouflage themed. Nothing was quite what it seemed, there were jello shots shaped like mini watermelons , “cherry” pies filled with spaghetti and meatballs, and my contribution, hamburger cupcakes. They were fun to make, and easily the most convenient cupcake I’ve ever eaten, since you can eat it like a sandwich.
A quick aside, these burger cupcakes spawned a controversial debate between my boyfriend and me. The question: is a burger a sandwich?
My side: yes, it’s stuff between two slices of bread, hence it is a sandwich
His side (aka the wrong one): you never call it a burger sandwich therefore it’s not a sandwich. What do you think?
Your favorite vanilla cake batter (mine came from a box)
Ditto with your favorite chocolate cake batter
White icing of your choice (mine came from a tub)
Food coloring red green and yellow
- Make your chocolate and vanilla cupcakes. I didn’t use liners to avoid crinkly bottoms. If you follow my lead be sure to remember to grease the pan.
- Meanwhile, create mustard and ketchup by siring appropriately colored food coloring into the frosting. You’ll need a ton of red unless you’re cool with pink ketchup. Also, mix a little green food coloring into coconut for lettuce.
- When cupcakes are cool, cut them in half.
- Assemble your burgers by stacking cupcake layers, squirting frosting through pastry bag, and sprinkling on coconut.
